Method: Wash fruits and break them off the
main stems. Place with water in large bowl and bruise fruits
thoroughly until water becomes a light pink colour. You can
heat the mixture until just before boiling to extract more
of the juice. (Do not cook too long or juice will become
very bitter.)
Remove the large pieces of sumac and pour the liquid through
a cheesecloth or fine sieve to strain out the smaller pieces
and hairs from the fruits. Add sugar or other sweetening
and stir until dissolved.
Cool and serve with ice cubes on a hot summer day. Makes
about 12 small glasses. This beverage is also pleasant when
mixed half and half with lemonade or with other fruit juices. |
